Fave Pinterest Recipes

Hi, y'all!

I won't lie.  I love Pinterest.  I love all the ideas I can get from it, but I especially love the food that I see there.

Like I've said before, I'm not a super great cook that can just throw things together, but I can follow a recipe.

Pinterest is definitely one of my main go-to's when I need some dinner (or breakfast... or lunch) inspiration.

Even though I can't claim any of these recipes as my own, I still want to share them with you because they're delicious and my family loves them.  So you'll see that I've linked back to the original source for them (and the photos, too).

Here are some of our very favorites:

Homemade doughnut bites from Chic Fluff!  What a fun Saturday morning treat!


Baked Chicken and Spinach Flautas from Healthy and Delicious.  Super yummy and healthy.  I used chicken broth rather than the beer and it tastes great!  And of course nothing makes mama happier than seeing her kiddos eat spinach!


Mini Caprese Skewers from Mel's Kitchen are not only flavorful, but absolutely beautiful.  I made them as an appetizer at Christmas and all I heard were rave reviews from everyone!

And y'all just have to know that there's some sort of baking that would worm it's way in here.  These Skinny Chocolate Chip Scones from skinnytaste.com have stolen my heart!  Plus, they freeze beautifully.  You know, just in case you don't eat them all in one sitting.  Like who would do that?  Ahem.


Like I said, all of these have been tried over here at Smoochin' in the Kitchen and heartily approved of.

Fruit Salsa with Cinnamon Tortilla Chips

Several months ago, I talked sweet Paco into buying me yet another cookbook. Okay, there may have been some fluttering of my eyelashes and a pretty puh-lease in there somewhere, but if there was, I'll never admit to it. End of story.

The reason I wanted this particular cookbook was because of the very first recipe I came across as I was flipping through. I knew that it had to get in my belly and the sooner the better. Mother's Day presented the perfect opportunity. It's light, it's fruity, it's summer-y.



Yup, pretty perfect.

Are you ready?  Okay....  Go!

Fruit Salsa with Cinnamon Tortilla Chips

Ingredients:

2 kiwi, peeled and diced
2 Golden Delicious apples, cored, peeled and diced
1/2 lb. of raspberries (or if you want to have mercy on your hubby by not sending him to the store and using the blackberries you already have in the fridge)

16 oz. package of strawberries, hulled and diced
1 c. plus 2 T. sugar, divided
1 T. brown sugar, packed
3 T. strawberry preserves
1 to 2 T. cinnamon
flour tortillas cut into wedges
butter-flavored non-stick vegetable spray

Directions:

Combine all fruit in large bowl; mix in 2 T. sugar, brown sugar and strawberry preserves.  Cover and chill for at least 15 minutes.

Combine remaining sugar and cinnamon.  Arrange tortilla wedges in a single layer on an ungreased baking sheet; coat chips with vegetable spray.  Sprinkle with cinnamon-sugar.

Bake at 350 degrees for 8 to 10 minutes.  Repeat with remaining tortilla wedges; let cool.  Serve chips with chilled fruit mixture.  Makes 10-15 servings.

*We had things in the oven already, so I just fryed the tortilla wedges in hot oil.  I would have preferred the baking method, but a girl has gotta do what a girl has gotta do.

Just be sure to grab some before your five children go at it.  Oh, you don't have five children?  Hmmm.  I guess that means more for you?

Christmas Recipes

Oh my goodness.  The last several weeks have been such a blur of kitchen goodness and I haven't been able to get here to share with you!  I've wanted to, gotten so close to the keyboard a couple of times and have been dragged away as I'm screaming out But. I. Must. Blog. About. This!

Now I have some serious making up to do.

I have been cooking and baking and baking and cooking and now I just want to wallow around in all of the leftovers, making everyone else eat all the fudge and cookies so that I can still fit into my pants.

Here are some of the recipes we tried in the month of December:

Baking

Almost a Candy Bar

Cooking

Vegetable Lasagna - Christmas dinner
Sausage and Peppers Lasagna - Christmas dinner
Pasta e Fagioli soup - Christmas Eve dinner

I'll share these recipes later, but if you don't want to wait, just click on the link and they'll take you right to where you need to go.  Most of them are Taste of Home Recipes (again, one of my favorite recipe sources), so they're almost guaranteed to be awesomely delicious.

But my absolute, hands-down favorite thing we made for Christmas dinner was the Caprese Skewers that I found on Pinterest.  Oh. My. Stinkin'. Gosh.  Seriously, the easiest thing I've ever made and they were perfect Christmas colors.


You must try these.  You must.  No seriously, do it.  You don't even need a freakin' recipe!!
